Rolling With The Punches (And Skinless Longganisa)

The past few weeks have gone by in a blur. Tonight, I made a pot of Nora Daza's Chicken and Pork Adobo - a dish to reliably call on for comfort.

I also mixed up a batch of sweet, garlicky longganisa - simple pork sausages studded with minced Ontario garlic, the last of the season; cured with apple cider vinegar, a tablespoon of spiced chili vinegar, a quarter cup of brown sugar, a tablespoon of salt, generous cracks of pepper, a tablespoon of achuete oil - really, something everyone needs to make once, for a solid year of enjoyment. Allowing for skinless homemade longganisa in a snap.
